Sweet Potato Smoothie Bowl

Prep Time: 10 minutes

Ingredients:

2 large sweet potatoes, cooked and cubed

4 medium bananas, sliced and frozen

1 cup rolled oats

2 Tbsp ground flaxseed

½ cup plant milk or water

2 tsp pure vanilla extract

1 tsp ground cinnamon

Optional Toppings:

  • 1 cup fresh fruit (blueberries, raspberries, strawberries)

  • 1 Tbsp chia seeds

  • Fresh mint leaves, chopped

Instructions:

  1. Put the sweet potato, frozen bananas, oats, flaxseed plant milk, vanilla extract and cinnamon in a high-speed blender for approximately 2 – 3 minutes.

  2. Blend until completely smooth.

  3. Top with fruit, chia seeds, and fresh mint. Enjoy!
