Texas Caviar
Serves: Approx 6 servings
Prep Time: 15 minutes
Ingredients:
15 oz black beans
15 oz black-eyed peas
15 oz sweet corn (or two fresh ears and cut kernels off)
1/2 cup red bell pepper, chopped
1/2 cup orange bell pepper, chopped
1 medium jalapeno, seeded and diced (optional)
1/2 cup red onion, diced
1/2 cup chopped grape tomatoes
1 tsp chili powder
1/2 tsp salt
1/4 tsp garlic powder
1/4 cup white wine vinegar
Juice from one lime
1 cup cilantro
Instructions:
1. Rinse and drain beans.
2. Add all the beans and vegetables to a large mixing bowl.
3. In a separate bowl, whisk together the chili powder, salt, garlic powder, white wine vinegar, and lime juice.
4. Pour the dressing over the vegetables and mix to combine.
5. Allow sauce to mix for at least 30 minutes. Serve immediately or refrigerate until serving. Serve with vegetables or baked tortillas.
